FS 3120 - Introduction to Nutrition This course prepares students to examine the physi- ological and biochemical basis for energy-yielding nutrients; structure, function, dietary requirements, digestion, absorption, transport and metabolism of macronutrients. It will further examine metabolism, dietary needs, deficiency symptoms and food sources of vitamins and minerals in humans.
